Gougeres Appetizer Bread

1 cup water
6 Tablespoon butter
1/2 teaspoon salt
ground pepper, to taste
1 teaspoon Grey Poupon mustard

1 cup flour

4 eggs

1 cup shredded Swiss or Gruyere cheese


INSTRUCTIONS:  In a saucepan, heat the above ingredients to a boil. Turn to low and add the flour all at once. Stir vigorously with a wooden spoon until mixture forms ball in pan. Beat in eggs one at a time until smooth. Stir in cheese and place on greased cookie sheet, forming into ring shape. Sprinkle the top with 2 Tablespoons additional cheese. Bake at 425 degrees for 40 to 45 minutes. Slice thinly, serve warm or cool.
